Ingredients:
- For Lemon Rice:
 - Cooked rice – 2 cups
 - Oil – 1.5 tbsp
 - Mustard – 1 tsp
 - Chana dal – 1 tsp
 - Urad dal – 1tsp
 - Cumin – 3/4 tsp
 - Green chillies 2
 - Curry leaves few
 - Peanuts – 1tbsp
 - Cashew – 5 to 6nos
 - Ginger – 1/4 tsp
 - Salt as required
 - Turmeric
 - Lemon juice 2tbsp
 - Hing
 - Coriander leaves few.
 
- In a pan add oil. Once hot add mustard seeds. Let it splutter.
 - Now add urad dal, chana dal, cumin seeds, green chillies, ginger and curry leaves. Fry them for a min.
 - Add Peanuts and cashew. Fry them until golden.
 - Now add cooked rice and mix well.
 - Add turmeric a pinch and salt to taste.
 - Mix everything well.
 - Turn off the flame and add lemon juice.
 - Add hing and coriander leaves.
 - Transfer to plate.
 - Serve hot with potato curry or appalam.
 
Ingredients:
- For coconut rice:
 - Cooked rice 2cups
 - Coconut Oil – 1 tbsp
 - Mustard seeds – 1 tsp
 - Urad dal -1tsp
 - Chana dal – 1 tsp
 - Dry Red chillies – 3
 - Curry leaves few
 - Idly podi – 1.5 tbsp
 - Salt
 - Coconut shredded – 1.5 cups
 - Cashews – 10 nos
 - Peanuts – 1 tbsp
 
- In a pan add coconut oil. Once oil is hot add mustard seeds and splutter
 - Add urad dal and chana dal. Fry for a min
 - Add dry red chillies and curry leaves.
 - Now add roasted peanuts and cashew. Fry golden.
 - Add shredded coconut and fry them for a min. Do not burn
 - Add cooked rice, salt, and idly podi and mix them well.
 - Garnish with coriander and serve hot.
