It is a traditional recipe of Tamil Brahmin Kitchen. It is tangy and spicy in taste.<br>Usually i have seen my mom making this kuzhambu with sundakkai, manathakali, brinjal or cluster beans, which are soaked in buttermilk and sun dried for 4 to 5 days.<br>Once they are sun dried they are called as vathal. Thats were we say Vathakuzhambu.<\/figcaption><\/figure>\n\n\n\n<ul class=\"wp-block-list\"><li>Cuisine: South Indian    <\/li><li>Course:Kuzhambu    <\/li><li>Cook time: 25mins                  <\/li><li>Prep time: 10mins          <\/li><li>Serves: 4 persons.<\/li><\/ul>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ingredients:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Tamarind extract &#8211; 2 cups <\/li><li>Dry Manathakalika vathal &#8211; 1.5 tbsp ( can be replaced with small onion, brinjal, drumstick, ladies finger) <\/li><li>Gingely oil &#8211; 4 tbsp <\/li><li>Dry red chillies &#8211; 3 <\/li><li>Curry leaves Few <\/li><li>Salt to taste <\/li><li>Mustard seeds-2 tsp <\/li><li>Fenugreek seeds &#8211; 1\/2 tsp <\/li><li>Toor dhall &#8211; 1\/2 tsp <\/li><li>Sambar powder &#8211; 2 tbsp <\/li><li>Jaggery &#8211; pinch<\/li><\/ul>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Method:<\/strong> <\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>In a vessel add oil and mustard seeds. <\/li><li>Once splutter add fenugreek, Dry red chillies, Toor dhall and curry leaves. Saute for a min. <\/li><li>Now add the Dry manathakalikka vathal and roast well in oil. <\/li><li>Add tamarind extract, salt and sambar powder. <\/li><li>Mix well and allow them to boil for atleast 20-25 mins. <\/li><li>Once the gravy starts to thicken add jagerry and stir. <\/li><li>If the kuzhambu has not thickened add one tsp of rice flour in water mix well and add to kuzhambu. Let it boil. <\/li><li>This will thicken the kuzhambu.<\/li><li>Turn off the flame once it is thick. <\/li><li>Serve with hot rice and smear a little gingely oil on it. <\/li><\/ol>\n\n\n\n<p class=\"wp-block-paragraph\">Note:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>This kuzhambu taste really good the next day. <\/li><li>The sundried vathal will already be salty.
