Vendakkai fry | Vendakkai Poriyal | Bhindi fry | Ladies Finger fry | Bhindi ki sabzi |

This vendakkai fry is simple and easy recipe that is good side dish for lunch. It is simple south Indian fry. Ladies finger is a common vegetable in India used by everyone. You can serve this fry with sambar, rasam, curd rice or lemon rice. I used mix hot rice and ghee.

Ingredients:

  • Chopped Ladies finger – 500gm
  • Oil – 3 tbsp
  • Mustard seeds – 1 tsp
  • Urad dal – 1/2 tsp
  • Turmeric a pinch
  • Curd – 2 spoons
  • Salt as required
  • Red Chilli Powder
  1. In a pan add oil, mustard seeds and urad dal. Fry them for a min
  2. Add ladies finger and mix well.
  3. Cook for 4 mins on medium flame.
  4. Add turmeric and curd. Mix well.
  5. Cook for 8 mins
  6. Add Salt and Red chilli Powder. Mix Gently.
  7. Do not stir often. It will crumble them.
  8. Once the color changes and it will start getting roasted nicely.
  9. Transfer to bowl and serve hot.
  • Note:
  • Adding curd reduces the stickiness in ladies finger
  • You can also add bean instead of curd.
  • If you use little more oil, it will roast nice crispy.
